An amazon will learn enough to get the desired result. I have one who has a pretty set vocabulary of five phrases that will get him most anything he wants from me. He will perform solidly in front of strangers or a microphone on a stage in front of many people, a video camera was something to act up grandly for. I have caught him practicing new phrases every so often, but he has no real need to increase his vocabulary.
I have had a Grey who would learn something new most weeks. Phone ringers, doorbells, cuss words, endearments, PSAs from the television. Even TV theme songs or catch phrases. He would NOT perform on cue. He seemed to take pride in making his owner look a fool when insisting he talked. A camera would record this bird as a deaf mute.
Many parrots simply respond to being included in conversations.

It depends on the training and the species of amazon. Yellow napes, yellow crowns and double yellow heads can learn a lot of words and phrases and talk a lot. Blue front amazons and Green cheek amazons, not as much. The orange wings, red loreds, white fronts and mealys usually don’t say very many words.
